Roasted Brussels sprouts side dish

Ingredients:

500g Brussels sprouts

200g diced bacon

100g grated Cheddar cheese

25g Pumpkin seeds

1/2 tsp Himalayan pink salt

ground black pepper

olive oil

Serves 4

Preheat the oven to 220°C. Cook the Brussels sprouts in a salted simmering water for 10-15 minutes. Fry the diced bacon in some olive oil. Set aside. Stir the bacon, pumpkin seeds, and ground black pepper through the Brussels sprouts. Spread the grated cheese over the dish and roast it for 10 minutes.
