Mini pancakes with strawberry jam and honey-flavoured syrup

Ingredients:

250g almond flour

200 ml milk

3 eggs

30g Stevia sweetener

butter for frying

low-sugar strawberry jam 

honey flavoured syrup to serve

Whisk together the almond flour, milk, sweetener and eggs. Add half a teaspoon of butter to a pancake frying pan and drop a large spoonful of batter into the melted butter. Fry the pancakes on low heat as the batter needs longer to cook through than the batter with flour. Adjust the heat once you flip the pancake to medium heat. It takes 2 minutes per side to cook each pancake. Fry 3-4 pancakes at a time. Serve the mini pancakes with strawberry jam and honey-flavoured syrup.
